If I select the pitot heat switch to on and taxi out and fly away,
how do I know it's working. If it's not working do I get an
indication that the unit is not being heated due to some fault?

You're not happy with looking at the ammeter and seeing that the current increases when you switch the pitot heat on? If it isn't working, what's causing the massive current draw? Dissipating that much current in the airplane's wiring harness, without heating the pitot probe, would probably start a fire and/or lead to a burning smell.
